Cooking: Roasted Salmon with Mustard and Dill (Recipe)



Now that we've officially kicked off the summer season (did you pull out your white linen?) I thought I'd share one of my favorite recipes for summer entertaining: Roasted Salmon with Mustard and Dill. Cooking a big salmon fillet (or two or three) is such a great way to feed a crowd. It's easy, it looks beautiful, and I always get requests for the recipe. 

Even better, this salmon can be prepared ahead and served chilled. It's actually my favorite way to eat it.

Roasted Salmon with Mustard and Dill

  • Large Salmon fillet 
  • Dijon Mustard (about 3 tablespoons)
  • Dried Dill (about 1 teaspoon)
  • Sea Salt and freshly ground pepper
  • A fresh lemon thinly sliced for garnish
Preheat the oven to 425 degrees.

Prepare the salmon by rinsing it and patting it dry. Season with salt and pepper.

Spread a thin layer of Dijon mustard all over the fillet. Sprinkle with dried dill.

When the oven has reached temperature, place the fillet on a greased baking sheet and roast in the middle of the oven until the salmon is done (use a fork to see if it flakes)--but don't over cook it. a three pound fillet usually is done in 15 to 18 minutes.

Garnish with lemon slices.

Serve immediately or chill for at least an hour and serve chilled.

I went ahead and made it. I agree, I preferred it when it was chilled. I went ahead and squeezed a lemon over it, in addition to the lemon garnish, and it was great! Thanks so much for a fun and easy new recipe!
