I've been making a version of this for years, but these were really fresh tasting and unique. <br /><br />I also made the salad and dressing, subbing Greek yogurt for the sour cream since it's what I had on hand. I made a huge amount and had absolutely NO leftovers of salad or enchiladas. It will give a bit of a kick, but won't make it too hot. If the cheese is getting too browned you can cover it with foil for the last few minutes until the interior is hot enough. I am not sure what the equivalent salsas would be here in Australia but you can buy mild or hot ones. The colours are really beautiful. We are fortunate here as we can eat outdoors for most of the year apart from a couple of months during winter depending on what part of the country one lives. I love your blog by the way.
